Beanless Hummus


1 medium head Cauliflower (roasted)

1/4 cup Extra virgin olive oil

2 tbsp Lemon juice

3 tbsp Tahini

1 cup whole Almonds, raw

3 clove(s) Garlic

1 pinch Salt and pepper (to taste)

1 tsp Cumin

1/2 tsp Paprika, smoked (optional)


1. To roast cauliflower:

  • Preheat oven to 450F

  • chop cauliflower into smaller pieces

  • drizzle with olive oil, salt and pepper

  • roast until golden and tender, about 20 minutes

2. Place roasted cauliflower in a food processor along with the olive oil, lemon juice, tahini, almonds, garlic, salt & pepper, cumin and paprika. Blend until smooth. 3. You may have to add a tablespoon or two of water to get the desired consistency. 4. Garnish with a drizzle of olive oil and chopped parsley if desired.
