Plantain Pancakes

These pancakes are made with nutrient dense green plantains so they won't spike your blood sugar like regular flour pancakes!

Ingredients for 1 meal

1/2 plantain(s) Plantain (green)

1 large egg Egg

3/4 tbsp Coconut oil

1/2 tsp Vanilla extract, pure

1 dash Baking soda

1 dash Salt


Peel plantains and add them to a high speed blender with remaining ingredients and blend until smooth.

Heat griddle or cast iron pan to medium-high heat and add additional coconut oil to melt.

Using a 1/4 cup measure, ladle out batter to make pancakes.

When pancakes have a few bubbles and appear dry on top, flip and cook a few more minute.
