Easy Savory Zucchini Pancakes

Zucchini Pancakes are the perfect way to enjoy the perfect vegetable


Servings: 2 Servings

  • 2 small Zucchini

  • 2 large egg

  • 3 tbsp gluten-free flour

  • 1 dash Black pepper

  • 1 dash Salt

  • 1 tbsp Olive oil


  1. Put eggs in a bowl and whisk lightly

  2. Add salt and pepper and mix

  3. Peel and grate zucchini. Then add them to the eggs and mix

  4. Mix in the flour

  5. Heat up a frying pan and add the oil for frying

  6. Use a spoon to pour the mix into the pen, a spoon per pancake

  7. Fry pancakes till lightly browned on each side
