Ingredients for 5 meals
1 1/4 tbsp Olive oil
2/3 cup White onion (chopped)
5 clove(s) Garlic (minced)
2/3 cup chopped Carrots
2/3 cup diced Celery
1 1/4 cup Lentils, raw
1/3 tsp Salt
2/3 tsp Paprika (dried)
1 1/4 tsp, ground Thyme, dried
1 1/4 cup Vegetable stock/broth, low sodium
1 1/4 leaf Bay leaf
In a medium-sized pot, heat oil over medium heat.
Saute onion, garlic, carrot, celery until softened.
Stir in lentils, salt, paprika, and thyme.
Add vegetable stock and bay leaf. Bring to a boil and reduce to a simmer.
Simmer for 15 minutes. Remove bay leaf before serving.
Serve 3/4 cup braised lentils with your choice of rice, barley, or whole-wheat couscous and/or a side of vegetables.
