VEGAN GOOD MORNING MUFFINS
I love to see when people get creative with Vega One® All-in-One Shake and move beyond the realm of the reliable (still delicious) Vega One® + fruit + non-dairy milk + ice routine. I made these Good Morning Muffins, which are packed with protein and fiber.

2 cups almond flour
½ cup gluten-free rolled oats
¼ cup ground flaxseed
2 tsp baking powder
1 heaping Tbsp French Vanilla Vega One® All-in-One Shake
1 heaping tsp ground cinnamon
⅛ tsp ground nutmeg
⅛ tsp salt
¼ cup coconut palm sugar
1 cup non-dairy milk
1 large ripe banana
1 Tbsp vanilla extract
Optional: Vegan chocolate chips or nuts of your choice
Preheat your oven to 190 celsius. Place paper liners in your muffin tin.
Add almond flour, oats, flax, powder, protein, cinnamon, nutmeg and coconut sugar. Blend until combined.
Add non-dairy milk, banana and vanilla. Blend until completely combined.
If using chocolate or nuts, add it by hand.
Then scoop out the dough with a melon baller and fill ¾ of the way filled in each muffin cup.
Bake for 12-15 minutes or until a toothpick inserted comes out clean. Let cool. Enjoy!
