Spicy Chicken Soup Mexican Style
Total Cooking Time: 30 min
1 tbsp olive oil
680 grams organic chicken breast (skinned and boned), cut in strips
500 ml mild salsa
300gr mushrooms mix
1 1/4 liters chicken broth
2 cloves garlic, minced
1 small red or white onion, chopped
1 jalapeno, diced
1. Stir fry onion and jalapeno in a large sauce pan with oil over medium heat. Cook and stir for 4-5 minutes or until tender. Stir in garlic.
2. Increase the heat then pour in broth. Allow to simmer for 5 minutes than add chicken. Cook for about 3 minutes until chicken is cooked all throughout.
3. Add salsa and mushrooms then allow mixture to simmer. Season with salt and pepper to liking. Serve hot.
