Passion fruit carrot bowl

This morning I started my first meal with this super food bowl, rich in antioxidant and anti-inflammatory agents. Also with my veggie in it (an entire yellow carrot).

It was inspired by your healthy fix book from Esther Andries. As a nutritionist, I always find myself trying to boost the ingredient synergism by combining the right elements in a recipe. My changes (extras) in her recipe was the following:

  • Phsillium Husk fiber

  • Maca powder

  • Yellow carrots


  • 150ml coconut milk

  • 100ml almond milk

  • 4 cubes of frozen passion fruit

  • 1 yellow carrot

  • 1/2 lemon

  • 1/2 tsp turmeric

  • 1tsp maca powder

  • 1 thick finger size of ginger

  • 1 tbsp physillium husk
