Sloppy Lentil Summer Rolls


6 piece Rice paper

1/2 cup Cilantro (coriander)

1 1/4 cup grated Carrots

1 1/4 cup Beets, raw (grated)

1 avocado(s) Avocado

1 1/2 cup Lentils, red, cooked

2 tbsp Sriracha

1 tbsp Sesame oil


1. Combine the lentils, Sriracha, and sesame oil in a medium sized bowl and mix ‘em up. 2. To make the rolls, you will need a large bowl of warm water. Making them one at a time, place each wrap into the water for about 1 minute or until it’s soft. 3. Lay the wrap onto your surface. Then place pieces of cilantro, a handful of carrots and beets, a few slices of avocado, and about a 1/4 cup of lentils down the center of the wrap 4. Next, carefully fold the sides of the wrap inward and then wrap the roll to close. Repeat with the remaining wraps.
